Working through a funk, or just an earnest desire to cluck over my family, baking goodies for the cookie jars is one fail-proof way of lifting everyone’s spirits in this house.
But sometimes the ‘regulars’ can get a bit, well, tired, you know? I’m not an adventurous cook; I like to spend my energy making things that I know will be appreciated rather than experimenting with things that could end up being a waste of time and resources. But once in a while it’s good to try something new, something that might make it onto the ‘regular’ list.
This week, as well as stocking up on muffins and scones and cookies, I’ve added a new cookie recipe to the go-to section of my mama-brain, but more importantly, a new cake recipe which I’m enjoying immensely with no complaints from anyone else :: lemon drizzle cake. I mean, doesnt the name make your mouth water?
It has all the ingredients of a favourite recipe :: it’s stupidly easy to make and immensely satisfying to eat. And so, in the spirit of being a good blogger I’m sharing the recipe that works for us for you too ::
Lemon Drizzle Cake
6oz self raising flour
4 tbsp milk
3 tbsp icing sugar
1. Grease and line a loaf tin.
2. Mix butter, sugar, flour, eggs, milk and add zest of one lemon and the juice of half a lemon.
3. Cook at 180°c, 350°f, gas mark 4 for about 40-45 min until done. Leave in the tin.
4. Mix remaining lemon juice and the icing sugar, warming if necessary, then pour over the cake.
5. Allow to cool before removing from the tin and greaseproof paper.
I will try added cherries to the next one and see if that works, and maybe even sultanas. Please do bake this for your family and let me know if they love it too!
